I like that coconut flour has a sweet flavor that is perfect for pancakes, waffles and even breading chicken and shrimp. I tried this brand recently and made a large batch of Belgian waffles. My family enjoyed them and we had extras to freeze for busy mornings The flour is very finely ground and smooth which makes it perfect for recipes whether you are cooking or baking. It tastes fresh and I think it is a better option versus the standard white flour. Iron, protein and fiber. It’s good for your immune and nervous system, as well as your bones. However you cannot just use coconut flour the same way you would use regular flour, it sucks up a lot more moisture so the recipient normally needs more liquid. It’s said that it needs an equal ration or liquid to flour. Also, the texture is a little different from regular flour, it’s fiberous like a coconut. I recommend using a recipe designed specifically for coconut flour, normally gluten free or paleo recipes are good for this. I always enjoy working with new foods. Coconut is one of my favorite things, and the remarkable variety of coconut products makes me very happy, so I was thrilled to be able to test coconut flour which was new to me. As far as baking goes, I’d heard differing opinions about whether the amount of liquid in the recipe needed to be increased if using coconut flour. In my experience, it did not, and a friend who also uses it extensively in her baked goods has said the same. However, do be aware that it’s possible that in some recipes you may need to supplement the amount of liquid you use. That said, I can report that the coconut flour used along with all-purpose flour, made a very tender, even delicate cookie. It didn’t impart much flavor to the mix, but I wasn’t going for a great deal of coconut flavor, so that wasn’t a problem for me in that particular recipe. In the coco-roons knock offs, it might have been nice to have more coconut flavor, but using a bit of coconut oil in the mixture did help. And in macaroons, using it instead of coconut milk powder was very successful, and the flavor was excellent, but there were several kinds of coconut product in the cookies. Bottom line here is that it’s a versatile flour for cooking and baking, and for smoothies as well, adding a good deal of fiber to the mix. But in terms of strong coconut flavor, it’s not as promising. I don’t think you can beat the price from Morning Pep, so if you want to experiment, try the one pound bag.
